Here are 10 truly "Super Salad Dressings" for you to try on your favourite salads, vegetables and even rice and grains.
“Hot” Salad Dressing
This is a very simple, and hot tasty salad dressing.
50 ml of extra virgin olive oil
1 de-seeded chilli (finely chopped) – red chillies are hotter than green – take your pick!
A handful of fresh mint leaves
Combine all the above ingredients with a whisk. It’s that simple!
My simplest, most delicious dressing ever!
Here is a very quick dressing that you can add to a salad, to grilled fish, steamed vegetables or to liven up rice, quinoa, bulgar wheat or barley. Just measure, mix and enjoy!
50ml extra virgin olive oil
15ml balsamic vinegar
10ml Tamari (wheat-free soy sauce)
Simply measure out each ingredient, place into a jar, cup or mug, blend thoroughly and serve as you wish. You only need 1-2 tsp per person… a little will stretch a long way!
Lemon Dressing
Juice and zest of half a lemon
20g of good olive oil
15g water
Sea salt and black pepper to taste
Blend or whisk all the ingredients together.
Yogurt, garlic, coriander dressing
Here is a very quick, tasty dressing, with a definite punch! It combines very well with a simple chunky cucumber mint salad (á la Tzatsiki), or poured over your favourite salad of the moment!
3 tablespoons plain “live” yogurt
1 dessertspoon organic virgin olive oil
1-2 cloves of fresh garlic, finely chopped, or minced
A small handful of fresh coriander
A squeeze of fresh lemon juice
Simply stir together the yogurt, olive oil, garlic, lemon juice and coriander and season with a touch of sea salt.
Fennel and Lemon Dressing
50g raw fennel, thinly sliced
1 tsp fennel seeds
1 ½ tbls lemon juice
2 tbls unsweetened apple juice
1 tbls virgin olive oil
1 clove garlic, crushed
To make the dressing…
Grind or crush the fennel seeds in a coffee grinder or use a pestle and mortar. Add them to a bowl, with the lemon juice, apple juice, sliced fennel, oil and garlic. Stir and set aside until ready to use.
* Mustard and Orange Dressing
1 heaped tbsp natural yoghurt
2 tsps hot horseradish sauce
Coarse black pepper to taste, optional
Blend all ingredients together.
* Mustard and Orange Dressing
3 tbsps natural/probiotic yoghurt
2 tbsps orange juice
2 tsps grain mustard (Dijon is an alternative)
Coarse black pepper to taste
Blend all the ingredients together.
* Dijon Mustard Dressing
2 tsps olive or rapeseed oil
1 tbsp water
2 tsps Dijon mustard
Coarse black pepper to taste
* Orange and Soy Dressing
2 tbsps orange juice
3 tsps soy sauce – I prefer Kikkoman for taste
1 tsp rapeseed oil
1 small piece fresh chopped ginger
1 tsp sesame seeds, optional
Blend all the ingredients together.
* Sundried Tomato Dressing
2 heaped tsps sundried tomato paste
2 tsps olive or rapeseed oil
Coarse black pepper to taste
